We are finally seeing some cooler weather here in North Texas and with cooler weather comes soup. At least it does at my house.

First up...Potato Soup!

I like mine thick and rich. Years ago, I took a recipe a friend came up with that we liked and played around until it became a staple in our house. I present it to you here.

1. Cube 1.5 lbs of bacon (got ya right there, didn't I?) and fry over medium heat in a stock pot to desired doneness. In this case, I like mine crispy. When done, move the bacon to a paper towel and drain the remaining grease.
2. Deglaze the pot with either sherry or a dry white wine.
3. Add 1 diced medium yellow onion, 1 diced large shallot, 3 cloves of garlic (minced), and a tablespoon of butter to the same stock pot. Sautee over medium-high heat until soft.
4. Add 1 quart of chicken stock and 1 court of vegetable stock to the pot. Increase heat to high.
5. Add 3 lbs of peeled and cubed russet potatoes to the pot and bring to a boil. After it reaches a boil, reduce heat to maintain a soft boil until the potatoes are very soft.
6. Remove from heat and add half of the bacon back to the pot.
7. Using an immersion blender, puree the mixture until smooth and creamy.
8. Add heavy cream and continue blending until thoroughly mixed. Honestly, I eyeball how much heavy cream, adding until I get the color and consistency I want.
9. Salt and pepper to taste.
10. Serve with sour cream, the rest of the bacon bits, chives, and shredded cheese.

This recipe freezes really well, so I sometimes double it to make sure I have plenty of leftovers. Also works great if you are only fixing for one or two people because its easy to freeze in smaller portions.

So - I had this thought. I think if I did this recipe, and right before you pureed the potatoes, you added a can of yellow corn, some clams, and some fresh parsley, you'd have a pretty amazing New England clam chowder.

Thing about soup is - there are no rules. Throw in what makes you happy.
 
Even better cold the next day. No leeks? ;)

I love potato soup, gonna try out your style Bob as in Mrs.SO is going to cook it and I eat it. She only trusts me on the grill.
 
We make Zupa Tuscano ( Olive Garden ) at least once a month. It takes 5 minutes to prep and 8 minutes in the Instapot. And it's soooo good.
 
I just made a pot of Cajun 10-Bean soup for the blustery weather tomorrow. I use the Ragin' Cajun brand. It comes with the dry beans and a seasoning packet. All I do extra is saute diced onions and sliced carrots, in the pan, a dash of hot Voodoo seasoning* , and add 1 lb of sliced Andouille. We'll eat that tomorrow with some crusty bread and and cold beer...

It’s funny how weather stimulates soup/chili desire.

Waking up to a frigid 52° outside this morning…I feeling like it might just be time for making a pot of navy bean soup with ham.

Found the Rajin' Cajun mix at my local grocery. Adding chopped onion, garlic, celery, carrots... also added a 28 oz can of tomatoes, some bay leaves, chicken stock, worcestershire sauce, fish sauce, and Texas Pete, and will add the Andoulle and some fresh parsley towards the end of the cook.

I like the sound of this one.

Careful adding too many salty ingredients...I used 1 cup of "Better than Bouillon" chicken broth & 9 cups of water. It took alost 4 hours for the beans to be tender enough for my liking. The spice packet ane Andouille make it plenty salty. Fish sauce is a great ingredient.
 
The 10 bean soup was fantastic. I did some Panini's on the grill to go with it. They were good but honestly the soup would've been enough. Thanks for sharing.

I know, right? It's very rich. Glad you liked it. I was a little apprehensive that the beans didn't have to be soaked, but after a couple batches, I'm convinced..
 
I just let mine simmer for 4 hours and it was perfect
