I had a bumper crop of both Habanero's and Carolina Reaper hot peppers this year. One of my favorite things to do is to make hot salts that can be used when BBQing or on anything else you like. Like to give away a lot of this to friends. I would never recommend trying to do this with Carolina Reapers or any superhot peppers. It will be a teargas experience for you if you try. I'm even careful using something like Habanero. For this year's batch, I basically took about 30 Habanero's, dried them in a food dehydrator (you could also use an oven). Then I took my food processor out to the front porch and turned them into a dried powder. Then I took a bag of limes, washed them well, cut them up, and food processed them peels, seeds, and all (I usually just use juice but trying this method this go-round). Next I took a big box of Kosher salt, put it in a large Aluminum mixing bowl, added the powdered Habanero's and the limes, along with about a cup of bottled lime juice.

Once I had that mixed well, I spread it on some food dehydrator trays (on top of some solid liner sheets) and will dry it for 24 hours or so. Some will tell you you can do this in your oven - and you can, as long as you don't mind being tear-gassed :)

When done, the salt mixture will come out like a concrete mixture. To get the finished product, I'll food process it in batches (again, on the front porch, because once dry, the stuff will aerosolize and be like tear gas!). Bottle it up and we're all set.

Here's what it looks like going into the dehydrator after mixing.

Brother Om is a fan of this stuff, so he's definitely getting a jar.

I'm going to make nuclear red pepper flakes from these once they are dry. But honestly, I'd be afraid to try and do anything else with them. Insanely dangerous. Carolina Reapers.

So after mentioning the possibility of spontaneously combusting if using this, what are your favorites to use it for? Particular meats, cuts, any spicy veggies etc?

My wife and I love Hot Salt! We try to find it commercially but its hard to find. Send me an e-mail at hilly_hoo@yahoo.com if you want to sell or trade for your finished salt. Cheers, Beeron
