What's for Dinner?

Homemade Naan bread pizza. Great stuff. Bruschetta instead of pizza sauce, Naan instead of crust, homemade mozzarella. Great stuff.

Now I'm making some cheesecake for dessert. Not that boxed junk either, the real deal. Any of you that don't like cheesecake that smells like filthy socks can stay in your miserable world with your wussy cheesecake :D
 
What are you talking about? My cheesecake is from scratch and has won awards. Seriously, its that good, but it sure as hell doesn't smell like socks.

You probably use cream cheese then :) Still good. I have no problem with it, that's what 99% of people have eaten.

I use Neufchâtel and German Quark cheese. Smells like a sweaty sock, tastes strong, and is insanely delicious. Everyone who's had it says it's better than any they've ever had.

I have always been a huge cheese nut, and I personally prefer stronger cheeses in general like special reserve ultra sharp cheddar, aged swiss, etc. and hate plain cheese like Provolone. You have to like strong cheese to like it, but it's crazy good.
 
Post the recipe sometime. I love strong cheese, am kind of a cheese and wine nut, actually.

Having said that, not sure I would call something "real" cheesecake that only 1% of people have ever eaten. :)
 
Today was my youngest 19th birthday. For supper my wife did green bean casserole and Mac & cheese with jalapeños. I did fried soft crabs, steamed clams on the grill, grilled bacon wrapped scallops, and tequila marinaded grilled shrimp.

Numerous Legends Brown Ale made it all possible.
 
Damn Rig. That sounds awesome. Yorktown isn't THAT far away. Next time, throw a brother an invite, huh?

Cheesecake that smells like dirty socks? Ummm...no thanks. You two can have that one.
 
Memo to self:

Be very cautious about dinner invites from people describing favorite food aromas in terms of dirty clothing. :eek:
 
Well, I finally broke down and tried to do something with this enormous zucchini I was given 2 weeks ago so I made a zucchini casserole.

The zucchini was about 18 inches long and as thick a fat albert wiffle ball bat so I onlyu needed to use the one.

I sliced it up with some onions, coated the casserole dish with olive oil, threw down zucchini and onions then added a little more olive oil. Added another layer of zucchini and onions. Then I shredded about 12 oz of cheddar (white sharp and yellow mild), threw a 6oz layers of cheese down, more zucchini and onions then topped it of with another 6oz of the cheese and baked it for about 40 minutes at 375.

Mmm...

Now, instead of olive oil, my mom (where I got the idea) uses fresh tomatoes which add plenty of juice to it. I am not a fan of the tomatoes so I used the olive oil.
 
Took a short trip to fish off the CBBT pier today. Well worth it. A 15 Lb. Sheepshead, 6 Spadefish over 3 lbs each, and a 3 lb Triggerfish.

Since my father in law is in town, I'm making some fish tacos. It's gonna be awesome.

Ingredients:

Tortillas
Mexican shredded cheese
shredded red cabbage
fried white onions
special sauce (chipotle tabasco mixed with sour cream)
seasoned black bleans
plenty of fish
lots of awesome
lime juice
montreal steak seasoning

filet and clean the fish, then cut them up into small cubes and throw into a sautee pan with butter, awesomeness, lime juice and montreal steak seasoning, stir and cook until it starts breaking up and flaking apart (it'll almost look dry).

Then load the fish and everything else onto the tortilla, and destroy :D

Rig, I know it's a bit of a hike from Yorktown, but they've been killing it for 2 weeks down here at the first and second island. Last week we had two 12 pound Sheepshead, 6 nice Spadefish, and a 3 pound Tog. We only fished for 2 hours, and weren't the only ones slaying them.
 
Comfort food tonight. Soup beans (pintos) and cornbread. Because my mommy raised me right :) We do our soup beans pretty simply - water, a ham hock or some bacon, some bay leaves, salt/pepper. Simmer them for hours and hours. Eat them with a healthy big spoon of sweet relish added.

My family has no interest in them, but I dearly love them. Wonder if it's just the childhood association or what? For me, they are delicious.
 
Mom makes her just about the same way... Mmm!
 
Made stuffed shells, cooking now. Took cream cheese ,mozzarella, and Parmesan, creamed together, added bacon (yeah, I know it's weird. But it's bacon - cant be bad, right?) and sausage, then used fresh made Mennonite shells, smothered in homemade marinara sauce.

Should be good.
 
Grilled some swordfish steaks with lemon, capers, olive oil, salt and pepper. Steamed some asparagus with lemon, and had some rice on the side.
 
Ribs on the grill and some homemade slaw to go with them tonight.
 
Wife is away so I had Chik-fil-A... I loves those damn chicken sandwiches!
