Broke in a new thermometer with jerk chicken. Breast for the Missus & thighs for yours truly. I picked up a Thermomaven remote thermometer at the recommendation of some fellow BBQ geeks and, (though I'm a loyal Thermoworks fan), and I'm very impressed.

    What's for Dinner?

Wow! We cook together too and call it "The Fran & Rick Cooking Show!" Crazy, right? Our kitchen is the size of a galley, so it's controlled chaos. My Mom loves to watch us work in the kitchen...she describes it as a dance, where we're weaving in and out, opening and shutting cabinets ...

    What's for Dinner?

They turned out great! For whatever reason, cooking lobster seems to intimidate people but, as you know, it's crazy easy to make. We buy a few tails whenever it's on sale and freeze 'em.

I couldn't keep one of those down even if I was starving

    Intermittent Fasting

I fast between meals and snacks. All joking aside, my metabolism is still pretty high for an old fuck, and most mornings I wake up starving. If you left a muffin on my bedside table, I could eat it before I open my eyes. My doctor said that's perfectly normal. The Missus and I do annual...

They're good...but they shrink too much. If you smoke or grill them, get the biggest, fattest oysters you can find. Sometimes when I'm steaming crabs, I'll throw a dozen oyster, in the shell, on top of the crabs during the last 10 minutes of the cook.

    Your Grilling Weapon of Choice?

Yeah....the idea of BBQ is that it's supposed to be relaxing and, somewhat primal. Blowers, augers, electronics, etc are nice but, somehow, people cranked out great BBQ before all that technology. The recommendation of a WSM is a hill that I'll die on. No electronics to fail and pretty...

    The BBQ Thread

I've gone back and forth over the years about pellet smokers but I have too many cookers now  That said, don't be surprised one day if I end up with one, but the Holy Grail for me is the Big Green Egg. I'm just to damn cheap to lay out the $$$ and I have an Akorn Auto Kamado, w/built in...

You're correct. I left out one important detail. I took out the bottom grates in both of mine because I never use them, so there's a little more space if you add charcoal. I leave the water pan in them, but rarely use water. I use a disposable aluminum pan to catch drippings for greasy cooks. If...

The Virtual Weber Board is probably the best resource for cooking with Webers out there and has.a section devoted solely to WSM smokers. It's been an invaluable tool for me...
