    I make them in rhe crock pot too and keep it simple. Onions, SPG, chicken stock and toss in some baby taters about 5hrs into the cook.

    Yeah, I'm looking forward to cooking these bad-boys. Anytime we take a road trip I do a search for local butchers and take a cooler. He brought out a big slab so I could pick out the ribs that I wanted and he sliced, trimmed and vacuum packed them while I watched. I paid ~ $105.00 for them.

    Thanks and your are correct. I zapped the tallow in the microwave at low power to liquify it enough to inject. I rarely inject, but this was such a small piece of meat that a little dose of additional fat couldn't hurt. Yeah, that's grilled baby bok choy.

    Hell yeah! Try to get the biggest, fattest ribs you can find...any time I go to a butcher, that's what I look for. I get individual ribs. That and pichana roast. It's similar to smoking a brisket. Smoke 'em low and slow, wrap after the bark is set, (usually that happens at ~ 170° internal)...
