They had live soft shell crabs again at Boarman's today - $8.99 each. Naturally I had to make a sandwich with tomato, lettuce, and tartar sauce on a toasted Amoroso Club roll. It was great! Forget about that frozen stuff. Live is the way to go!

Did Dorac St. Louis Ribs yesterday. Forgot to take a pic of the top side so did it here - this is 20 mins in - I'm using the Rendezvous rub, no sugar! It started to rain off and on so I put the smoke device under a cutting board - it has a magnet on the back This is four hours in...

    Show Yourselves!

My buddy Neal. He just sent this to me on msn messenger. We went to the same high school, the same college, and we were housemates for a number of years. This is at one of our many tailgates on the ring road. He was not a regular tailgater but he came by to visit. I will guess this pic is...

    What's for Dinner?

I only cold smoke in the winter. I cold smoke cheese. I use my SnS Kettle but a Weber would do. I will light two kingsford briquets, then as they start to ash over, place small pieces of wood on the coals. Direct the smoke to flow over the cheese. If it's cold enough outside, the temp in...

Okay I have tried the cheese curls. Wow - these are really interesting. You take one, you bite it in half, then put that half between your molars and crunch it a few times. And the crunched up cheese curl just dissolves in your mouth. It reminds me of cotton candy. It just melts right there...

What is your favorite/coolest/rarest bit of Burgundy and Gold memorabilia you own?

Nope. Non FB Anne had nothing to do with it - but it is a museum quality box. I bought it from somebody somewhere through the internet. Can't remember where, it was a loooong time ago. Very pricy. That's some kind of plastic/glass stuff that stays clear - doesn't fade. That's a sort of...

What is your favorite/coolest/rarest bit of Burgundy and Gold memorabilia you own?

Damn SF1311, it is a small world. I have tons of stuff. But my fave is Nick Novak's game worn jersey. He wore this jersey when the Redskins beat the Cowboys in 2005 - Monday Night Miracle at Texas Stadium. The Cowboys were favored by six. Nobody remembers Novak as a hero by any means in...

    What's for Dinner?

I'll be honest with you. This damn rain is pissing me off. But the beef looks great! Sliced perfectly.

Most of us aren't going to have a commercial holding box like an alto-shaam which can run well into the four figures. I'm lucky enough to have an old Jenn-Air which is an electric convection oven and gas stove top and it holds at whatever temp you want. This is exactly how I do brisket. I...

    What's for Dinner?

Half smokes last night. I like these because they are a DC classic. I prefer the ones from downtown at Meats & Foods which are made fresh daily by hand. The ones from Meats & Foods are the best in the region. A bit of a drive for me. But these made by Stachowski are very good. Sold at HT...

Did wings last night. Wife said they were "the best yet" which says something. They were basically perfect. Crispy and crunchy on the outside, juicy in the middle. And yes, I am now employing the SF1311 method of applying the sauce at the table on the plate. Works great! I'm using the...

    Random Thoughts

Spartan Road in Olney, MD. A bypass? We need one. Something. Yesterday I was trying to get to Harris Teeter and I had to come to a screeching halt as an assembly of geese were crossing the road. Very charming, and this has been going on for quite some time - ten years or more, right...

A Cubano to use up that pulled pork from Sunday. Hard to find authentic Cuban bread in the DC area but I've found a fresh ciabatta loaf from Panera works nicely.
