    Looks so nice. Glad everything worked out for you. I'm a big fan of the long 150F hold, it has always worked well for me. And yes, I do the tallow thing too. BTW, I'm doing a pork butt today on the charcoal drum. Putting it on in a few mins. Long cook. But easy peasy compared to a brisket.
