  1. What's for Dinner?

Thanksgiving was a homerun. Only had the in-laws over, enjoying dinner outside (weather was amazing) but we made enough food for an army. I smoked a turkey that was perfect, added in a Torta Pasqualina (swiss chard/ricotta pie), squash casserole, mashed potatoes, mashed sweet potatoes, cornbread...
  2. What's for Dinner?

Made chili last night for the first time in far too long. Had a top round roast I ground up as well as some homemade dried anaheim peppers. Ground those up for a homemade chili powder and just went with a simple beef broth. It was outstanding. Added some cast-iron cornbread for good measure and...
  3. What are you drinking?

Haven't tried it myself but heard really good things, fwiw.
  4. What's for Dinner?

FWIW I couldn't get them to bake evenly either until I switched to a cast-iron skillet. I brown the butter first to get it hot, then make the dough and press it back into place. Really good results that way.
  5. Birth of a Beer...

So I just bought a kegerator with two taps. Got the local Soft Serv from South Street in CVille (Ice Cream porter) and am waiting on Bask from Basic City here in town (NEIPA) on the other. I haven't been in this thread forever but was literally thinking the other day that next Summer I might...
  6. What's for Dinner?

I've got a 15lb brisket sitting in my freezer waiting for an excuse. Since we don't really have gatherings of over 5 anymore it may be a while... Been baking a lot lately (because I'm trying to be consistent with working from home during the pandemic) and enjoying it. Lots of breads, a few...
  7. Summer Garden Time

Our peppers have been incredible this year, best year ever I think. Normally we get a few, but my wife went for Anaheim, Jalapeno and Poblanos and they have exploded. I went ahead and bought a dehydrator and am doing that to them to store them for the winter months for chilis and the like. I...
  8. What's for Dinner?

Fair point. It was still really freaking good though.
  9. What's for Dinner?

My folks (finally) bought and closed on a house about ten minutes from us so I made a celebratory dinner Wednesday. Beef Tenderloin slow-roasted in the oven (would have grilled but rain prevented that) which was amazing. But the star of the show was a bacon-wrapped gratin. Fan bacon out of the...
  10. The Perfectly Elusive Perfect Burger

Yeah, I usually "grind" whatever I am using in a food processor to make sure I maximize flavor and texture. That way I can use chuck but also cut in some sirloin or something else (I cut in some bacon the other day and that was... very good). Then keep the add-ins to a minimum, imo. Let the beef...
  11. The BBQ Thread

Been grilling a lot lately because the weather is hot and cooking over a fire with a beer is pretty great. Lot of salmon last week because it was on sale. Got some tuna this week that I'm looking forward to. My parents just got their offer on a house about 13 minutes away accepted; I have a...
  12. The Bombshell

Were you expecting that the story would be a murder that was somehow kept quiet until now? That seems... unrealistic. You appear to have two problems with all this: 1) the actual information did not conform with YOUR expectations of what the story was going to be. 2) the rest of us do not agree...
  13. The Bombshell

OK Elephant, I feel like you're addressing me pretty directly with your cheerleader pics, so allow me to address you directly. First though, to any ladies of this site, I apologize, sincerely. I do not remember specifics, but I am sure I said inappropriate, chauvinistic comments about the...
  14. The Bombshell

Uhhh, hard no from me on that one. If we continue to allow men in authority to objectify women, you know what will happen? They'll keep doing it. If we continue to say, well this is bad, sure - but it's worse elsewhere, you know what will happen? They'll keep doing it. If we qualify any...
  15. The Bombshell

I believe it. 100%. The team statement was pathetic. An absolute joke.
  16. The Bombshell

This whole thing is objectively disgusting. The statement from the team denies nothing so I really think we can all move on from the "WaPo might be lying" bullshit. Besides which, everytime "named sources" are used by ANY news outlet, the story is immediately discounted and attacked. This story...
  17. What's for Dinner?

Yeah, sorry. https://www.allrecipes.com/recipe/9057/chicken-bog/ Good starting point but you can really go in a lot of directions with extra veggies and spices. I will recommend just starting with the original (without Italian Seasoning in that recipe) - you'll be amazed at the flavor from so...
  18. What's for Dinner?

Making Carolina Chicken Bog tomorrow, one of my top ten favorite recipes. Super easy and a crowd pleaser. The wife's parents are coming by for some social distancing on the deck and it's a pretty easy meal to throw together.
  19. What's for Dinner?

Been making homemade Ricotta from our fresh-from-the-farm raw milk lately. Usually I make Ricotta Pasta or something like that but I changed it up this week. Last night I made manicotti with beef and rosemary and tonight I'm doing a cheese lasagna. The homemade stuff is SOOOOO much better than...
  20. Coronavirus - COVID19

Yes. Add to that the workers who face the choice of being removed from unemployment or possibly contracting a very serious disease with potentially life-threatening consequences. My daughter is facing that choice right now in RVA and it sucks for all of us. The people who are screaming about...
