Stocks, Soups, and Sauces

I love Gazpacho, especially in the summer when something cool and healthy is appealing. I made some a couple of days ago and here is my process. I have a giant stainless steel bowl and essentially puree my vegetables in the food processor and dump them in, to include:

- a mix of tomatoes (cherry, roma, heirloom, etc...), probably close to 10 full sized tomatoes
- an onion and a handful of garlic cloves
- a couple of carrots
- a green pepper
- 3 or 4 peeled asian type cucumbers

I also roughly chop some fresh parsley and cilantro and add that. I add the following non-vegetable ingredients:

- 1/4 cup of red wine vinegar
- generous splash of Texas Pete or other hot sauce
- Salt and freshly ground black pepper
- a cup or two of V8 juice
= a cup of pre-made breadcrumbs (or if you are feeling fancy, some sourdough bread you've pulsed into crumbs)

This makes for some amazing Gazpacho and it just gets better after a few days in the fridge.

Sounds great! I use sherry vinegar, a bit of toasted almonds, and a pinch of fresh toasted and ground cumin seeds

Authentic Spanish gazpacho does not include cilantro señor! 🤣

I love me some chowda. Lobster bisque, too, probably more.
Authentic bisques are thickened with pureed rice cooked in the stock and not roux...just an FYI for all of us cooks! 😃

I made what was probably one of the best soups I have ever eaten today. It was a red lentil soup that was simple to make. Basically onions, carrots, and tomato, mixed with a cup of red lentils, vegetable broth, and several spices including turmeric, garlic powder, and cumin. I used a hand blender to mix it once it was done. Being vegan for the last five years, I am always looking for new ways to use beans/legumes and I will definitely be coming back to this one. I am pretty confident non-vegans would love it also.
