If the defense spends a player entirely on Griffin every play Morris is going to gash them. How many times have we seen a LB zero in on Griffin only to discover he doesn't actually have the ball.Why doesn't that work? Is it just too easy for the QB to figure out and get around in this scheme?

The spy only really works on mobile QBs to keep them from killing the defense by leaving the pocket on busted pass plays. While Griffin running with the ball is incorporated into our scheme, we don't rely on him to scramble for tons of yards, and he prefers not to actually do that. A spy would be a waste against us.
