This weekend I’ll be doing the Baltimore edition of ‘Opposing Delicacies’ where we highlight one or two culinary specialties of our road game opponent city.

Since the good guys are facing the Ravens on Sunday, this week I will be taking on two Baltimore, MD favorites, ‘Coddies’ (fried codfish/potato balls) and ‘Baltimore Pit Beef’, a regional take on a classic roast beef sandwich served with sliced onion and tiger sauce.

Can't wait to watch the new episode. Cooking shows have always given me a sense of calm and relaxation for whatever reason, and I often was able to sit there for a few hours watching them in the past and get completely zoned out on them. Opposing Delicacies creates that same feeling - well done, John!
 
I love to cook, especially things I’ve never tried before. So this is a pretty fun exercise although I definitely need a cameraman!

I saw both your hands in use while shaping the coddies. I am beginning to think your strapped your phone to your head to film... 😆

I totally know the smell of the salted cod. It is forever etched in my memory having grown up in an Italian family. My mom made "bacala" every Christmas Eve. Let's just say you wouldn't want to accidentally forget your salted cod in your car overnight.

The food looked great! Time to cook the Ravens now!
 
Duct taped my phone to the overhead Paul, lol... I have never tried or made Bacala but it sounds delicious. Definitely some stank involved when talking salt cod, but I'll be when you smell it you are immediately transported back to those Christmases. Food was very good. Round 2 today.
