What's for Dinner?

Wasn't last night, but the gf and I made some short-rib tacos in the slow cooker a week ago that were AH-MAZING. Maybe the best thing I've ever made.
 
Late night snack for the kids last night - really simple Jalapeno Poppers. Just slice your peppers lengthwise, clean out seeds/membrance so they look like a little canoe (in other words, don't cut off the end of the peppers to seed them). Then fill each one with cream cheese, and wrap each one with a 1/2 slice of bacon and secure with a tooth pick through the sides. Bake at 375 for 30 minutes. Maybe the best combination of just 3 ingredients ever?
 
Just some of the good eats I had for draft weekend (Thur. through Sun. with some leftovers for about three days). Gained about 6 lbs., but lost 2 already. The only things missing from these pics are the stuffed flounders, shrimp, and apple pie. Aready looking forward to opening day weekend. :)

Homemade ravioli, homemade marinara and bracciole. Even making some garlic knots. This guy will be getting fatter tonight boys :D
 
I did fried flounder tonight. In couple weeks will get som fresh soft crabs to fix.

Made one of my childhood favorites my mommy used to make for me, tuna noodle casserole. It's not really a casserole, more like a salad but it's good.

Mom used to use macaroni noodles, I like to use penne.

1 box Penne
4 cans tuna

carrots
celery
onions
Mayo - The amount of those the last 4 items is to your liking.

Old Bay - again the amount of old bay is to your liking. Mom used to use salt, I added the old bay.

That is a stroke of genius, I actually never tried that. As my 6 year old son says, "you could put Old Bay on dirt and eat it." Of course I said, "son, dirt is already delicious." :laugh:
 
Went to our local farmer's market this morning and bought some local chicken (butchered last night - that fresh). Going to grill it peruvian style (marinating in a mix of white wine, vinegar, olive oil, lemon juice, smoked paprika, garlic, salt/pepper). Will do a little grilled zucchini as a side.
 
Man that sounds good. The kids have some friends coming over tonight, so we're making homemade pizzas.
 
Best chicken I have ever had. I'm sold on local fresh at this point. Hit the peruvian chicken with some fresh-squeezed lemon juice and fresh ground pepper as it came off the grill. Amazing. 2 inch thick breasts, completely cooked and you could slice through them with a butter knife.

John, how prepped was the chicken? Did you have to pluck the feathers or were they plucked? Nothing worse than plucking the feathers off the chicken. I didn't mind chopping their head off, but I hated having to pluck them!
 
It was packaged just like you'd see it in a grocery store - except the breasts were still connected. Nice :)
 
Cooking up some ribeyes (local beef I picked up at the Farmer's Market) that I've had marinating in one of my favorite marinades overnight. Soy sauce, balsamic vinegar, olive oil, fresh thyme, garlic, black pepper, and lots of chopped shallots. Doing some baked potatoes to go along.

Tried these tonight, pretty damned good. Had burgers, potatoe salad, a corn/peppers/chickpeas salad and these guys. Really, really good. Thanks for posting, Boone.
 
Cracker Barrel tonight. Mom's favorite...ok, I like it too!
 
Filet mignonette, grilled zucchini and squash, and spaetzle. This was menu my wife requested.
 
Emily made a dynamite marinade with lime, lemon, olive oil and garlic. Really simple, but full of flavor. Marinaded 10 chicken thighs for a day and a half, then grilled them for the fam. Also had baked potatos, fresh salad (from the CSA) and fresh cooked collards.

Good damn lunch.
 
Doing Eastern-Style NC Barbecue on the grill today. Here are the basics if anyone's interested. I do mine on a gas grill - that's sacrilege here - but don't let anyone tell you it can't be done and turn out amazing. I do a homemade dry rub on my pork shoulders, and contrary to the instructions, I do baste every 30-60 minutes with apple cider vinegar/hot sauce/red pepper flake solution. Also keep some wood chips smoking on the burner and throw in 3-4 garlic cloves to add to the smoke every several hours.
